What do you think about another chemical being sprayed on our produce? How about some sunscreen? As crazy as it sounds, it's true. Here's the scoop:

Free Range and Pastured Eggs Are Not The Same Thing

All eggs are not equal. Even if it says "cage free" it's not the same as "pastured eggs". Are you a foodie looking for pastured eggs or someone who needs the vitamin D and omega 3 from real pastured eggs? It's not always easy finding eggs from happy chickens, the ones that have a diet of grass, insects and other foods natural to chickens. Look for the words "pastured" to get the real thing, or better yet talk to the farmers about how they raise their chickens.

Our ER weight control group had a detailed discussion after I received this comment:
Alicia wrote,
"I called and talked to a local small farm market about their eggs. They are "free range" in the pen, with nesting boxes. He said they can't be pastured because of predators. They eat a vegetable & omega 3 diet. What do you think of that?"

First I think it was wonderful that Alicia called the farm market to see if their eggs are from pastured chickens. Talking to farmers is always the best way to know what you are getting. The farmer said his chickens eat vegetables and omega 3. I wonder if this is organic and what omega 3 he uses. Yes chickens love vegetables but it doesn't produce the same egg as ones coming from chickens eating grass, insects and other foods that are their natural diet.

Alicia here's what we discussed in Dr. Heidi's ER group about your farmer's chickens:

Patti said:
"Many small chicken growing folks have taken to using movable 'chicken tractors'. The chickens then are free range in a small area of pasture but are moved on a regular basis as they eat down an area.

One thing many good beef growers are doing now a days is rotational grazing--enclosing cows in a small area with a portable electric fence and moving them every 12-24-48 hours depending on the pasture. They then follow with sheep and finally with chickens using a chicken tractor. This helps all the animals and uses and restores the pasture's fertility.

I would encourage your friend to keep looking. With feed costs being what they are, most people are getting pretty creative with their chickens. (A 50# bag of organic feed cost $13 a year ago in our area--which is a high price nationally--now it is $26). You can't grow eggs or even meat chickens at that price for any kind of profit without charging about a minimum of $7-8 a dozen. Obviously, if chickens are eating on a pasture their food costs drop significantly".

Dr. Heidi says:
"When advising your friends, do mention degrees of quality/nutrition/real-ness of eggs (and other foods). It's not detrimental to health to eat organic eggs from a natural food/health-oriented market. That's the lowest rung in the healthy-egg ladder. Next is organic omega 3. These two classifications do not address whether the chickens' feet ever touch the ground (many never do!) or whether their organic diet is grain or green vegetable or both. But they are acceptable - ie, not risky or dangerous industrial food like some supermarket eggs might be."

"While folks are searching for the top-of-the-line egg, it's ok to eat just organic eggs. This may help make foraging for the ER egg an enjoyable adventure rather than a stressful one. Ideally, pastured eggs would be our staple (eggs from chickens raised as Patti described) and use organic and organic omega 3 eggs only when pastured eggs are not available."

"Even an egg McMuffin is a choice - when the alternative is starvation or acute depression... :)" Dr. Heidi

Here's a link to a state-by-state Farm Directory that lists more than 800 pasture-based farms for grass-fed meat and dairy products in the US and Canada. You should be able to find eggs from pastured hens and milk, and cheese from grass-fed goats and cows. Just click on your state in the map. Then an alphabetical listing will come for the farms in your State.
Those that are listed on 'Eatwild.com" have to meet very strong criteria. Hope this resource is of help to some of you.

This recent story from KansasCity.com tells how a farmer has overcome obstacles while raising "pastured eggs".

I found this part of the Kansas City news article interesting, because the farmer Alicia contacted said "predators" was the reason his chickens weren't pastured.
"To ward off predators, electrified netting was stretched in wide rectangles around each schooner. The chickens can pass through the netting, but anything bigger gets a frightening jolt. Red lights blink atop telephone poles to scare away birds of prey."

So if a farmer really wants to raise pastured chickens they can find ways to do it. I found this info in a very short time so help is out there. I guess it comes down to what is most important to the farmers and consumers.

Steak 'n Eggs: Good or Bad For Weight Loss?


What's the best way to lose weight fast and remain healthy? Kim Klaver asked this on the Inside Whole Food Nation Blog

Kim writes;
Should you do the low-carb Atkins-type bacon, beef and eggs? Or should you do a lo-cal/lo fat Ornish-type plant-based regime?

This post is about one part of the debate: Are steak and eggs good or bad for healthy and fast weight loss?

There has been much hysteria pro and con the Atkins-type weight-loss regime, with the low-cal/lo fat and portion control camp screaming that red meat and eggs are dangerous.

In a recent weight loss study Atkins folks sponsored, plant-based diet supporters gleefully point out that participants were being apparently counseled “to choose vegetarian sources of fat and protein.'’

Kathy Freston, a Dean Ornish low-fat, calorie-counting anti-meat fan girl, insists that "there's a growing shift toward healthy, plant-based diets, especially among people looking to lose weight and keep it off." And a shift away from meat, animal fats and eggs, she writes.

However, lo carb and meat and blubber enthusiasts show proof of healthy weight loss and of keeping it off. Like me. Or Dr. Heidi and her ER clientele.

What should you believe?

Both. Steak (all red meats and poultry) and eggs are like cholesterol: There's good and there's bad. You need to know which is good and which is bad.

Bad Meat
Most meat in U.S. supermarkets and restaurants come from confined and un-pastured cows who are often sick. Poky's animal 'hospital' (described in Pollan's Omnivore's Dilemma) is one of many big-animal hospitals that treats feedlot cattle from industrial feedlots. Most of the animals' health problems, Pollan reports, are directly or indirectly related to what they're fed.

The cows are force-fed corn and soy which they can't digest. "They're made to eat forage, and we're making them eat grain," says Dr. Metzin who treats them. p. 77, Omnivore's Dilemma)

Virtually all feedlot cattle, according to animal scientists, are sick because they cannot digest grain.

The sick animals are then shot full of antibiotics so they live a little longer - so as to get a bit fatter before they're slaughtered. Happy Sunday cookout.


Yes, the Dean Ornishes and Kathy Frestons are right. Eating bad meats and fats from from such animals can NOT be good for you. Avoid eating bad meats and fats.

Good Meat
Grass-fed animals. Grass-fed animals are pastured. [NOT pasteurized - but pastured.] Grass-fed animals are allowed to forage and graze in pastures - on grass and other stuff on the grounds. Eating what they eat naturally. They're not shot full of antibiotics because their owners made them sick by force-feeding them the much cheaper corn and soy.
(McDonald's chicken nuggets are 56% CORN, according to Omnivore's Dilemma.)

Shopping tip: When shopping at Whole Foods or other market that has organic fare, ASK the meat person: Do you have grass-fed beef (or chicken)? If not, find a local farmer. They'll have grass fed beef and poultry. Google local farmers in YOUR CITY or check for local farmers online at Local Harvest or the Weston A. Price Foundation.


Bad eggs
Same story. Don't eat the eggs from chickens that caged together in spaces no bigger than an 8 and 1/2 x 11" sheet of paper, for their entire life. Don't eat those that are fed bio-engineered grain. Don't eat those kept awake with lights blazing into their cages 24/7 so they can lay as many eggs as possible before they're turned into soup. Those eggs can not be good for you. They're available in most restaurants and supermarkets.

Good eggs
Eat eggs from pastured chickens - they're the ones that go OUTSIDE and scratch around on the ground at the farm, eating grass, worms and such that they are designed to eat. NOTE: These eggs are also a surprise source of Vitamin D.

Shopping tip: Contact your local farmer for pastured chickens and eggs from pastured chickens. Organic is not enough here (not if you want that extra Vitamin D benefit, says Dr. Heidi here). See sources above.

Bottom line: Find pastured grass-fed animals. Eat those. They're the good meat and animal fats. They have the same kind of GOOD fats that ocean fish have, they have more minerals and vitamins and they're not fattening or disease producing, like the feedlot animals.

True, you won't keel over after one McDonald's hamburger. But the cumulative effect over the years of eating bad meats and bad animal fats weakens a body and makes it ripe for a disease to strike. Usually when you least expect it.

Extreme Regime Weight Control

What do you expect from a weight control program called Extreme Regime? It's not some exotic diet. It is eating real food but not what you might expect.

Here's what ER (Extreme Regime Weight Control) is NOT:

No calorie/carb counting
No portion control
No "diet" foods

I recently had an opportunity to sample a whole food snack. I'm really picky about snacks especially if the label says Healthy all Natural. I've learned healthy and all natural don't mean much. Diet Foods (Fake Food) Making You Fatter?

It's not your fault you are not losing weight on diets. It's a myth that all you have to do is eat less and move more. Blame it on the information we have about why people are overweight and how to shed the pounds. Blame it on the "diet foods" on the store shelves.

Overweight people are the most disciplined folks I've met. They have tried for years to lose weight with roller-coaster results. They do not like being overweight and try different "diets" looking for the one to help.

Fake food makes you fatter. Low calorie, sugar free foods have artificial sweeteners that are actually toxins in our body. Your body doesn't like these toxins and tries to protect you by filtering them through your liver. When your liver is overloaded your body protects you by retaining water to start a different protection method. The water is used to escort the toxins out of your body, but often they get lodged in your tissue. Your body wants to flush the toxins, but when they don't go, your body continues to retain the water. Which makes it look fat and puffy. The more often you eat artificial sweeteners the more fat you get. This is how the cellulite starts.

The same thing happens when you eat artificial food colors and these are found in foods, drinks and even vitamins.

If you want a candy bar it's better to eat the real thing without the artificial ingredients and pass on the low cal, sugar free.

Raisins And More For Healthy Gums And Teeth


What we eat does make a difference in keeping our teeth and gums strong. We need to eat foods high in calcium and vitamins A, C, and D. Of course we know when we bombard our teeth with sugary, sticky snacks we risk cavities.

Did you know raisins might actually be good for teeth? Researchers at the University of Chicago discovered in lab studies that oleanolic acid, a compound raisins are high in, prevent plaque-causing bacteria from sticking to teeth. Too bad I don't like raisins.

Many people are drinking fruit juice as a healthy alternative to sodas but this is a problem for teeth. Juice is a very concentrated source of sugar. Researchers in Switzerland found that grapefruit and apple juices did slightly more damage to teeth than soda did.

Eat your fruits and vegetables for strong teeth and gums! Researchers in Japan found that people who ate the least amount of fruits and veggies had the fewest teeth at age 74.

Of course we know calcium makes strong bones and teeth. This was a problem for me since I don't like milk and went many years not getting enough calcium. Now I know I can eat my veggies, which I love, and get calcium.

What veggies to eat for calcium?
Turnip Greens - bok choy - curly endive - kale - broccoli - okra - collards

Other calcium rich foods:
Milk - yogurt - ricotta cheese - Parmesan cheese - mackerel w/bones - salmon w/bones - sardines - dried figs - tofu, firm - baked beans - soybeans - chickpeas - white beans - pinto beans.

Beef Recall - Possible E-Coli

Beef Packers, Inc., a Fresno, Calif., firm, is recalling approximately 1,560 pounds of beef cheek products because they may be contaminated with E. coli O157:H7, the U.S. Department of Agriculture’s Food Safety and Inspection Service announced today.

The following products are subject to recall:
30-pound boxes of “CARGILL MEAT SOLUTIONS CORPORATION, BEEF CHEEK MEAT – SM BX.”

These boxes of beef cheek meat products bear the establishment number “EST. 354” and a “PACKED ON” date of “07/02/08,” ink-jet printed on the label, however, the product was intended for further processing or for packaging as raw beef cheek meat and will likely not bear the establishment number “EST. 354” on products available for direct consumer purchase.

The problem was discovered by company microbiological testing.

These beef cheek products were shipped to distributors in Fresno, Modesto, Santa Rosa and Vernon, Calif.

FSIS has received no reports of illnesses associated with consumption of this product. Anyone with signs or symptoms of foodborne illness should consult a medical professional.

We Eat 38 Billion Burgers - Let's Make Them Healthy

Is the cheeseburger our national dish? We order more than 13 billion burgers in restaurants and make another 25 billion at home, according to NPD research group. Looks like burgers are ranked up there with Mom and Apple Pie.

Is there a way to have a healthy cheeseburger? I know I'm hesitant to eat burgers at a restaurant namely because of the food recalls this year; beef e-coli recalls, tomato or peppers, and even cheese recalls. How do I know if they are cooking the meat long enough to supposedly kill bacteria? How do they keep their produce, is it away from meat, properly stored? Where do they get their food?

There is a healthy cheeseburger that is not a fast food burger but fast to prepare. And you won't get 1,130 calories like if you eat the Big Mac meal.

This recipe was created for Kim Klaver by her nutritionist, Dr. Heidi Dulay. Kim doesn't digest meat easily, and she's a Carbo Type (light appetite). But she craves a burger or filet mignon a couple of times a month, probably because she's a Blood Type O. Kim is also a true Dutch girl - she loves cheese.

(25 minutes from start to serve.)
Prep the veggies - all organic. (Any light veggies ok.)
Mince in a food processor or by hand and put in a large bowl.
½ c carrot
1 c red onion
4-5 large cloves garlic
½ c zucchini
½ c green cabbage

Add and combine:
1 lb grass fed ground beef (find grass fed beef here)
1 organic egg, from a happy hen
Himalayan or Celtic salt to taste
Freshly ground organic black pepper
2 tb organic tamari
2 tb organic red wine or 1 tb organic unrefined vinegar

Heat a frying pan, preferably cast iron or enameled cast iron (no Teflon), with:
Organic expeller-pressed coconut oil (Tropical Traditions) to coat bottom of pan .

Make the patties.
Slice the cheese: Raw cheddar or raw gruyere or raw goat cheese
Cook the burgers about 3 minutes on one side. Turn them over and put the cheese on top.
Cook covered another 2 minutes or until done to your taste.

Serve with:
Organic stoneground mustard
Thick slices of organic tomato
Thick slices of organic red or white onion
Organic lettuce
1-2 capsules Pop-A-Green or Pop-A-Purple, with a glass of water.

P.S. Macho men who love burgers are amazed how much they love these. They like the burgers in a bun - sprouted wheat or whole grain, of course.

Vegetarians who are transitioning back into eating some meat are surprised at how easy it is for them to eat these.

Time-saving tip:

Make a double recipe and freeze the excess burgers. Or make a double recipe and make half into burgers and half into a meatloaf, goulash, taco filling, lettuce cup filling, or minchi. Freeze what you don't eat in meal sized portions. Makes great TV dinners.

Drinking Coffee And NOT Eating In The Morning Halts Weight Loss


I'm a participant (auditor) in a weight loss program that is quite unusual, at least it's unusual based on what I've aways believed about weight loss and health. I'm in the program to get rid of the belly baby fat I've had since the birth of my son 10 years ago.

During the call last Saturday I learned my first mistake was skipping breakfast. I would drink coffee first thing in the morning and then I wasn't hungry. Dr. Heidi told us, "since coffee is a stimulant that kills your appetite that's why you're not hungry in the mornings. Many people may think that's good."

"Not eating signals your body to pump up her fat storing machine. Your body is designed to protect you. When you don't eat for several hours or more, your body perceives a famine coming. So it makes more fat-storing enzymes. The longer and more often you go without eating, the more efficient your body becomes - at fat storing. (!) [your body does that to protect you so there's something in her storage bin for you in case you go even longer without eating. She knows you might need it for energy later.] "

After working with Dr. Heidi I've replaced my coffee with Decaf green tea with coconut oil in it. Dr. Heidi designed a breakfast drink for me based on what my body needs. My belly baby fat is going down after eating in the morning, who knew?

Wii-habilitation: Using Video Games To Heal Burns

Video games — often regarded as nothing more than mindless entertainment for lethargic kids and teens — are proving to be an effective, new tool to motivate patients to perform rehabilitation exercises.


Rehabilitation therapists from the William Randolph Hearst Burn Center at NewYork-Presbyterian Hospital/Weill Cornell Medical Center are using the motion-sensitive Nintendo Wii video game console, along with traditional methods, to help patients recover from life-changing injuries.

Patients hold wireless remotes that control actions on screen. Players swing the controller to simulate realistic motions, like swinging a tennis racquet, swatting a baseball for a homerun, among countless other motions. For burn patients or any patient with a skin graft, moving and stretching the skin is very painful, but imperative for a successful recovery.

The Burn Center is also employing a special add-on to the Nintendo Wii system, Guitar Hero III. The controller for the game resembles a miniature guitar. Patients strum a bar on the guitar's body and press color-coded buttons that resemble notes. Therapists hope that Guitar Hero will help patients with burns on their hands, arms and shoulders to regain fine-motor control.

Risk Of Pancreatic Cancer Higher In Obese Postmenopausal Women

Obese women who carry most of their extra weight around the stomach are 70 percent more likely to develop pancreatic cancer, an international team of researchers recently reported.

"We found that the risk of developing pancreatic cancer was significantly raised in obese postmenopausal women who carry most of their excess weight around the stomach," one researcher said in a statement.

"Obesity is a growing and largely preventable problem, so it's important that women are aware of this major increase in risk."

Pancreatic cancer is the fifth leading cause of cancer death worldwide. It accounts for only about 2 percent of the cancers diagnosed each year but the first-year survival rate is less than 5 percent, according to Johns Hopkins University in Baltimore.

Until now, smoking and chronic pancreatitis were the most well established risk factors for the disease in men and women, with much of the evidence also pointing to a stronger obesity link for men.

They found that 251 women developed the disease, and of these, 78 had the highest waist-to-hip ratios. After factoring in other risk factors, this was 70 percent more than the 34 women with the lowest excess stomach weight who got pancreatic cancer.

Several studies have shown that obesity raises the risk of several types of cancer including breast and colon as well as heart disease and other conditions.

Forget The Vitamin D Supplement -- Eat Eggs From Happy Chickens...

A new study gives Vitamin D a grade of A+ for prolonging life after colon cancer. Patients diagnosed with colon cancer who had abundant vitamin D in their blood were less likely to die during a follow-up period than those who were deficient in the vitamin, according to a new study by scientists at Dana-Farber Cancer Institute.

The findings of the study -- the first to examine the effect of vitamin D among colorectal cancer patients -- merit further research, but it is too early to recommend supplements as a part of treatment, say the investigators from Dana-Farber and the Harvard School of Public Health.

In a report in the June 20 issue of the Journal of Clinical Oncology, the authors note that previous research has shown that higher levels of vitamin D reduce the risk of developing colon and rectal cancer by about 50 percent, but the effect on outcomes wasn't known. To examine this question, the investigators, led by Kimmie Ng, MD, MPH, and Charles Fuchs, MD, MPH, of Dana-Farber, analyzed data from two long-running epidemiologic studies whose participants gave blood samples and whose health has been monitored for many years. This is great news but how do we get more Vitamin D? Sun? Supplements? Both excess sun exposure and vitamins have been under the radar for some time, they are not always the best thing for health.

I recently learned about a food that has vitamin D and as a bonus it is an excellent source of Omega-3 Fatty Acid oils! What is it? The egg... Not just any egg offers these health promoting vitamins and oils. It must be eggs from happy chickens.

A new study compared the amount of weight lost with low-fat diets, Mediterranean diet and the low-carb diet. There was not a huge difference in the total weight lost but enough to show the low-carb might be best for some people.

I was still surprised to learn that after two years, dieters lost an average of 7.3 pounds on the low-fat regimen, 10 pounds on the Mediterranean diet and 12 pounds on a mostly vegetarian version of the low-carbohydrate Atkins diet. Let me change this to I was surprised that they ONLY lost 7.3 - 10 - and 12 pounds in 2 years.

The low-carbohydrate diet excelled at improving the cholesterol profile, reducing the total cholesterol-to-good cholesterol ratio by 20 percent, compared to just 12 percent in the low-fat diet. For diabetics, the Mediterranean diet was best for lowering fasting glucose levels.

How Food Affects The Brain - Study

Our brain needs food nutrition to stay healthy. When you feel tired or depressed or just kind of out of sorts, it's because your brain feels these things. Scientist have found different ways food affects the brain. The major areas in this study include:

"Food is like a pharmaceutical compound that affects the brain," said Fernando Gómez-Pinilla, a UCLA professor of neurosurgery and physiological science who has spent years studying the effects of food, exercise and sleep on the brain. "Diet, exercise and sleep have the potential to alter our brain health and mental function. This raises the exciting possibility that changes in diet are a viable strategy for enhancing cognitive abilities, protecting the brain from damage and counteracting the effects of aging."

Gómez-Pinilla analyzed more than 160 studies about food's affect on the brain; the results of his analysis appear in the July issue of the journal Nature Reviews Neuroscience and are available online at www.nature.com/nrn/journal/v9/n7/abs/nrn2421.html.

Omega-3 fatty acids — found in salmon, walnuts and kiwi fruit (and eggs from pastured chickens * my quote) — provide many benefits, including improving learning and memory and helping to fight against such mental disorders as depression and mood disorders, schizophrenia, and dementia, said Gómez-Pinilla, a member of UCLA's Brain Research Institute and Brain Injury Research Center.

Omega-3 fatty acids are essential for normal brain function, Gómez-Pinilla said.

"Dietary deficiency of omega-3 fatty acids in humans has been associated with increased risk of several mental disorders, including attention-deficit disorder, dyslexia, dementia, depression, bipolar disorder and schizophrenia," he said.

Children who had increased amounts of omega-3 fatty acids performed better in school, in reading and in spelling and had fewer behavioral problems, he said.

Recent research also supports the hypothesis that health can be passed down through generations.

A long-term study that included more than 100 years of birth, death, health and genealogical records for 300 Swedish families in an isolated village showed that an individual's risk for diabetes and early death increased if his or her paternal grandparents grew up in times of food abundance rather than food shortage.

The brain is highly susceptible to oxidative damage. Blueberries have been shown to have a strong antioxidant capacity, he noted.

In contrast to the healthy effects of diets that are rich in omega-3 fatty acids, diets high in trans fats and saturated fats adversely affect cognition, studies indicate.

Junk food and fast food negatively affect the brain's synapses, said Gómez-Pinilla. Brain synapses and several molecules related to learning and memory are adversely affected by unhealthy diets, he said.

In Okinawa, an island in Japan where people frequently eat fish and exercise, the lifespan is one of the world's longest, and the population has a very low rate of mental disorders, Gómez-Pinilla noted.

Adequate levels of folic acid are essential for brain function, and folate deficiency can lead to neurological disorders such as depression and cognitive impairment.

He noted that while some people have extremely good genes, most of us are not so lucky and need a balanced diet, regular exercise and a good night's sleep.

85% Of Sunscreens Not Effective And May Not Be Safe - Check Yours.

This is a follow-up to yesterday's post about more young women than men getting skin cancer. The first thing I thought of was that women might use tanning beds more often than men. I knew a young woman who tanned year round. We are in Minnesota - the frozen tundra - she would wear shorts all year to show off her tan.

Could sunscreen cause cancer?
According to Skin Deep many sunscreens are falling short on what we think they will to do.

Skin Deep says;

More Americans than ever are using sunscreen to protect from sunburn and guard against skin cancer. Top choices include products with high SPF ratings, and that are waterproof or that advertise "broad spectrum" protection. Most people trust that the claims on the bottle will ensure that the product truly protects their health and their families'. Nothing could be less certain.

Only 15% of 952 products analyzed met EWG's criteria for safety and effectiveness, blocking both UVA and UVB radiation, remaining stable in sunlight, and containing few if any ingredients with significant known or suspected health hazards.

Many products lack UVA protection.

Sunscreens break down in the sun.

Questionable product claims are widespread.

Many sunscreens contain nano-scale ingredients that raise potential concerns.

*Most sunscreen chemicals are far from innocuous.
*In sunlight some release free radicals that can damage DNA and cells, promote skin aging, and possibly raise risks for skin cancer.

E Coli Outbreak From Kroger Beef - 44 Cases

State departments of health and agriculture in several states, collaborating local health jurisdictions, CDC, and the United States Department of Agriculture’s Food Safety and Inspection Service (USDA-FSIS) are investigating a multi-state outbreak of Escherichia coli O157:H7 infections.

Based on this investigation, as of 5pm EST, July 14, 2008, 44 confirmed cases have been linked both epidemiologically and by molecular fingerprinting to this outbreak.

The number of cases in each state are as follows: Indiana (1), Kentucky (1), Michigan (20), New York (1), and Ohio (21). Their illnesses began between May 30 and June 24, 2008. Twenty-one ill persons have been hospitalized. One patient has developed a type of kidney failure called hemolytic-uremic syndrome (HUS). No deaths linked to the outbreak have been reported. Twenty-five (57%) patients are female. Patients range in age from 4 to 78 years with a median age of 20 years.

State health and agriculture departments tested ground beef recovered from several patient residences that was purchased at Kroger® retail stores in Michigan and Ohio. Molecular fingerprinting testing conducted by the Ohio and Michigan Departments of Health and Agriculture Laboratories, in collaboration with PulseNet, the national molecular subtyping network for foodborne disease surveillance, on E. coli O157 isolates isolated from these ground beef samples have confirmed the isolates to be the outbreak strain of E. coli O157.


Nebraska Beef, Ltd., recently expanded a recall of its beef amid reports that its production practices might have been inadequate for controlling Escherichia coli O157:H7, as the number of patients sickened in a two-state outbreak rose to 41.

On Jul 3 the Omaha company expanded its Jun 30 recall to include 5.3 million pounds of its beef, including all trim and other products intended for use in ground beef, produced between May 16 and Jun 26, according to a press release from the US Department of Agriculture (USDA). The company's previous recall applied only to 531,707 pounds of trim, chuck, and other components.

According to trace-back investigation findings, Nebraska Beef supplied beef to certain Kroger grocery stores in Michigan and Ohio. The USDA's Food Safety and Inspection Service (FSIS) said ongoing epidemiologic and trace-back investigation findings prompted the expanded recall.

According to a previous FSIS statement, ground beef samples from two federally inspected establishments supplied by Nebraska Beef and multiple samples of Kroger ground beef from patients' homes were contaminated with E coli matching the outbreak strain

The expanded recall by Nebraska beef prompted the Kroger Co. to expand its own ground beef recall on Jul 3. Previously Kroger had recalled ground beef from stores in Michigan and parts of Ohio with sell-by dates between May 21 and Jun 8. The company didn't specify how much ground beef was subject to either recall.

Lean Pockets Recalled - May Contain Plastic Pieces

Nestlé Prepared Foods Company, a Mt. Sterling, Ky., establishment, is recalling approximately 199,417 pounds of frozen stuffed chicken sandwich products that may contain pieces of plastic, the U.S. Department of Agriculture's Food Safety and Inspection Service announced today.

The following products are subject to recall:
9-ounce boxes of "Lean Pockets Spinach Artichoke Chicken - 2 sandwiches." Printed on the side of each box is a "Best Before" date of "Nov 2009" followed by a package code beginning "8144 544616." Also printed on the side of the package is the establishment number "P7721A."

The products were produced on May 23 and distributed to retail establishments nationwide.

The problem was discovered after the company received consumer complaints. FSIS has not received any consumer complaints at this time. Two injuries have been reported to the company. Anyone concerned about an injury from consumption of the products should contact a physician.

Is Diet A Cause Of Skin Cancer?

A new study shows that skin cancer in young women increased 50 percent between 1980 and 2004. There hasn't been an increase in men. Why is this? Researchers say studies need to be done to see if it could be from longer sun exposure or tanning beds.

Two things different in young men and women -
Young women use more skin care products - do we know how safe these are? I'll post about this tomorrow.
Also women tend to diet more often for weight loss. When dieting we might not be getting the nutrients our body needs to prevent cancers of all kinds.

Is diet a cause of skin cancer?
Our diet gets worse every year. More processed foods hit the store shelves, we consume more fast food and junk food. With this food trend we are losing the nutrients our body needs to prevent cancer while adding cancer promoting food.

Cancer promoting oil.
We have to cut back on oils high in omega-6 fatty acids. That includes corn oil, safflower oil and sunflower oil. Eat more of the omega-3 type fat in fish. I don't eat near enough fish so I add fish oil to my morning drink. I use Carlson's Norwegian Cod Liver Oil, as recommended by Dr. Heidi Dulay.

How fats effect sun cancer risk.
When your cells have too much omega-6 fat and not enough omega-3, the production of prostaglandins goes into overdrive, encouraging the onset and growth of skin tumors. A proper balance of fish oil helps block the disastrous biochemical cascade of events.

A study with mice:
In mice, safflower and sunflower oils, high in omega-6, definitely spur the growth of melanoma. Studies have also shown that patients with melanoma ate about twice as much omega-6 type polyunsaturated oil as a similar group without the cancer.

Keep the ratio of omega-3 to omega-6 fatty acids high. Eat fish (wild not farmed) at least twice a week and avoid high linoleic acid vegetable oils, such as corn oil. Olive oil is fine. An international conference in 1989 found that eating butter, with a higher ratio of omega-3 to omega-6 was safer than eating high omega-6 vegetable oils.

Don't forget the antioxidants.
Eating fruits and vegetables high in antioxidants combats the ability of omega-6 fats to promote melanoma. Putting antioxidant vitamin C in the drinking water of mice with melanoma inhibited tumor growth, size, invasiveness and increased survival time.

Here's an interesting study about NK (natural killer cells) and antioxidants:

A study at the German Cancer Research Center compared the blood of male vegetarians and meat eaters. They found that vegetarians' white cells were twice as deadly against tumor cells as those of carnivores. This means vegetarians needed only half as many white cells to do the same job as meat eaters did. Why vegetarians' white cells are more deadly is not clear. Researchers speculated they may yield greater armies of natural killer cells or more feroious (natural killer) NK cells.
You don't need to be vegetarian - do get those fruits and vegetables in your diet.

Eat more omega-3 oils - eat more fruits and veggies to protect the skin you are in.

7 Things You Can Do To Prevent Foodborne Illness


With the salmonella outbreaks it got me to wondering if there were things I could do to protect my family. There's only so much the FDA can do to make sure our food is safe. Think about it, they can not monitor every food industry in the U.S. at all times. Here are some tips on what we can do to keep food safe. It's still not a 100% guarantee.

Safeguarding your home against foodborne illnesses begins not at home, but at the supermarket, grocery store, or any other place where you buy food that you plan to store and serve.

Combating foodborne illnesses is a top priority at the Food and Drug Administration (FDA). That's because, according to the Centers for Disease Control and Prevention (CDC), foodborne ailments cause about 325,000 hospitalizations and 5,200 deaths nationwide each year.

You as a consumer can play a key role in preventing these illnesses. While shopping for food, you should:

1. Check for cleanliness.
Buying from a retailer who follows proper food handling practices helps assure that the food is safe. Ask yourself: What is the general impression of this facility? Does it look and smell clean?

2. Keep certain foods separated.
Separate raw meat, poultry, and seafood from other foods in your grocery shopping cart. Place these foods in plastic bags to prevent their juices from dripping on other foods. It is also best to separate these foods from other foods at checkout and in your grocery bags.

3. Inspect cans and jars.
Don't buy food in cans that are bulging or dented. Also, don't buy food in jars that are cracked or have loose or bulging lids.

Since foods sold in cans or jars are processed to be sterile, they can "keep" for a long time if the can or jar is intact. A bulging can or jar lid may mean the food was under-processed and is contaminated. A dent in a can, especially if the dent affects a seam, may cause an opening in the seam which may allow contamination, as would a crack in a jar. A loose lid on a jar means the vacuum has been lost and the product may be contaminated. Don't buy a food product whose seal seems tampered with or damaged.

4. Inspect frozen food packaging.
Don't buy frozen food if the package is damaged. Packages should not be open, torn or crushed on the edges. Also, avoid packages that are above the frost line in the store's freezer. If the package cover is transparent, look for signs of frost or ice crystals. This could mean that the food in the package has either been stored for a long time or thawed and refrozen. In such cases, choose another package.

5. Select frozen foods and perishables last.
Meat, poultry, fish and eggs should be the last items placed in your shopping cart. Always put these products in separate plastic bags so that drippings don't contaminate other foods.

6. Choose fresh eggs carefully.
Before putting eggs in your cart, open the carton and make sure that the eggs are clean and none is cracked. Buy only refrigerated eggs and follow the "Safe Handling Instructions" on the carton.

7. Be mindful of time and temperature.
It's important to refrigerate perishable products as soon as possible after grocery shopping. Food safety experts stress the "2-hour rule"—because harmful bacteria can multiply in the "danger zone" (between 40° and 140° F), perishable foods should not be left at room temperature longer than 2 hours. Modify that rule to 1 hour when temperatures are above 90° F, as they often are in cars that have been parked in the sun.

If it will take more than an hour to get your groceries home, use an ice chest to keep frozen and perishable foods cold. Also, when the weather is warm and you are using your car's air conditioner, keep your groceries in the passenger compartment, not the trunk.

What Is Salmonellosis?

What is salmonellosis? Do you really understand the what, how and why about salonellosis outbreaks? I felt it was important to post this now, even though it is after the tomato - pepper (or whatever it is) salmonella outbreak to help the public know more.

CDC says:

Salmonellosis is an infection with bacteria called Salmonella. Most persons infected with Salmonella develop diarrhea, fever, and abdominal cramps 12 to 72 hours after infection. The illness usually lasts 4 to 7 days, and most persons recover without treatment. However, in some persons, the diarrhea may be so severe that the patient needs to be hospitalized. In these patients, the Salmonella infection may spread from the intestines to the blood stream, and then to other body sites and can cause death unless the person is treated promptly with antibiotics. The elderly, infants, and those with impaired immune systems are more likely to have a severe illness.

What sort of germ is Salmonella?
Salmonella is actually a group of bacteria that can cause diarrheal illness in humans. They are microscopic living creatures that pass from the feces of people or animals to other people or other animals. There are many different kinds of Salmonella bacteria. Salmonella serotype Typhimurium and Salmonella serotype Enteritidis are the most common in the United States. Salmonella germs have been known to cause illness for over 100 years. They were discovered by an American scientist named Salmon, for whom they are named.

How can Salmonella infections be diagnosed?
Many different kinds of illnesses can cause diarrhea, fever, or abdominal cramps. Determining that Salmonella is the cause of the illness depends on laboratory tests that identify Salmonella in the stool of an infected person. Once Salmonella has been identified, further testing can determine its specific type.

How can Salmonella infections be treated?
Salmonella infections usually resolve in 5-7 days and often do not require treatment other than oral fluids. Persons with severe diarrhea may require rehydration with intravenous fluids. Antibiotics, such as ampicillin, trimethoprim-sulfamethoxazole, or ciprofloxacin, are not usually necessary unless the infection spreads from the intestines. Some Salmonella bacteria have become resistant to antibiotics, largely as a result of the use of antibiotics to promote the growth of food animals.

Are there long term consequences to a Salmonella infection?
Persons with diarrhea usually recover completely, although it may be several months before their bowel habits are entirely normal. A small number of persons with Salmonella develop pain in their joints, irritation of the eyes, and painful urination. This is called Reiter's syndrome. It can last for months or years, and can lead to chronic arthritis which is difficult to treat. Antibiotic treatment does not make a difference in whether or not the person develops arthritis.

How do people catch Salmonella?
Salmonella live in the intestinal tracts of humans and other animals, including birds. Salmonella are usually transmitted to humans by eating foods contaminated with animal feces. Contaminated foods usually look and smell normal. Contaminated foods are often of animal origin, such as beef, poultry, milk, or eggs, but any food, including vegetables, may become contaminated. Thorough cooking kills Salmonella. Food may also become contaminated by the hands of an infected food handler who did not wash hands with soap after using the bathroom.

Salmonella may also be found in the feces of some pets, especially those with diarrhea, and people can become infected if they do not wash their hands after contact with pets or pet feces. Reptiles, such as turtles, lizards, and snakes, are particularly likely to harbor Salmonella. Many chicks and young birds carry Salmonella in their feces. People should always wash their hands immediately after handling a reptile or bird, even if the animal is healthy. Adults should also assure that children wash their hands after handling a reptile or bird, or after touching its environment.

What can a person do to prevent this illness?
There is no vaccine to prevent salmonellosis. Because foods of animal origin may be contaminated with Salmonella, people should not eat raw or undercooked eggs, poultry, or meat. Raw eggs may be unrecognized in some foods, such as homemade Hollandaise sauce, Caesar and other homemade salad dressings, tiramisu, homemade ice cream, homemade mayonnaise, cookie dough, and frostings. Poultry and meat, including hamburgers, should be well-cooked, not pink in the middle. Produce should be thoroughly washed.

Cross-contamination of foods should be avoided. Uncooked meats should be kept separate from produce, cooked foods, and ready-to-eat foods. Hands, cutting boards, counters, knives, and other utensils should be washed thoroughly after touching uncooked foods. Hand should be washed before handling food, and between handling different food items.

People who have salmonellosis should not prepare food or pour water for others until their diarrhea has resolved. Many health departments require that restaurant workers with Salmonella infection have a stool test showing that they are no longer carrying the Salmonella bacterium before they return to work.

People should wash their hands after contact with animal feces. Because reptiles are particularly likely to have Salmonella, and it can contaminate their skin, everyone should immediately wash their hands after handling reptiles. Reptiles (including turtles) are not appropriate pets for small children and should not be in the same house as an infant. Salmonella carried in the intestines of chicks and ducklings contaminates their environment and the entire surface of the animal. Children can be exposed to the bacteria by simply holding, cuddling, or kissing the birds. Children should not handle baby chicks or other young birds. Everyone should immediately wash their hands after touching birds, including baby chicks and ducklings, or their environment.

How common is salmonellosis?
Every year, approximately 40,000 cases of salmonellosis are reported in the United States. Because many milder cases are not diagnosed or reported, the actual number of infections may be thirty or more times greater. Salmonellosis is more common in the summer than winter.

Children are the most likely to get salmonellosis. The rate of diagnosed infections in children less than five years old is about five times higher than the rate in all other persons. Young children, the elderly, and the immunocompromised are the most likely to have severe infections. It is estimated that approximately 400 persons die each year with acute salmonellosis.
